Our keto chocolate mug cake boasts just 4 net carbs per cake. It’s the perfect quick win whenever a sugar craving strikes. You can make it a gooey chocolate mug cake by cutting the cooking time in half. When making any keto cake, or baking anything keto, ingredients matter. I have used coconut flour for this cake base because it is much lower in calories and healthier than almond flour. Besides having many calories, almond flour is high in omega 6 fats, which for some of us can throw off our Omega 3:6 ratio.

If you struggle to get the granulated sugar substitute to dissolve, powder it. You can powder any granulated sugar substitute in your kitchen with any blender. We use our magic bullet or pull out our Vitamix for even finer powdered sugar. BochaSweet has the closest taste to sugar and measures cup for cup.

Keto Chocolate Mug Cake Thumbnail

Keto Chocolate Mug Cake

  • Total Time: 15 minutes
  • Yield: 1 Serving

Ingredients:

  • 4 teaspoons cocoa powder
  • 2 tablespoons boiling water
  • 2 tablespoons BochaSweet Sugar Replacement
  • 4 teaspoons coconut flour
  • 1 teaspoon acacia fiber powder (or a pinch of xanthan gum)
  • 1/4 teaspoon baking soda
  • 1 tablespoon MCT oil (or olive oil)
  • 1 large egg
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Measure boiling water into a mug.
  2. Mix in sugar substitute and cocoa powder until sugar substitute is dissolved.
  3. In a small bowl, stir together coconut flour, acacia fiber powder, baking soda, and salt.
  4. In the mug, stir in MCT oil (or olive oil), vanilla, and egg.
  5. Then stir in coconut flour mixture. Stir for 60 seconds.
  6. Let mixture rest for 2-5 minutes. This is a great time to put away the ingredients.
  7. Place the mug in microwave and cook on high until cake is done in the middle about 2 minutes and 15 seconds in a 900 watt microwave. If the cake is too dry, you overcooked it.
  8. Allow to set for 5-10 minutes to cool before enjoying.
  9. Top with powdered sugar substitute or homemade whipped cream.
