Mini Classic Sugar-Free Blueberry Muffins

Ingredients:
- 1 pouch Classic Muffin Mix
- 3 eggs
- 1/2 cup butter (or coconut oil), melted
- 1/4 cup almond milk
- 1/4 teaspoon ground coriander
- 1/8 teaspoon grated nutmeg
- 6 ounces blueberries
- Optional: Sprinkle Granular BochaSweet to taste
Instructions:
- Preheat oven to 425F. Line 48-count mini muffin tin with liners or lightly grease.
- In a large bowl, combine Classic Muffin Mix, eggs, butter (or coconut oil), almond milk, ground coriander, blueberries, and grated nutmeg. Using a spatula or whisk, mix ingredients until a smooth batter forms.
