Keto Brownie Cheesecake

  • Total Time: 45 minutes (chill 3 hours)
  • Yield: 12 slices

Ingredients:

Brownie Base

Cream Cheese Filling

  • 1/2 cup BochaSweet Sugar Replacement
  • 1 lb cream cheese (substitute: dairy free options)
  • 1/4 cup heavy whipping cream
  • 1/2 teaspoon vanilla extract
  • 2 eggs
  • Optional: Garnish with sugar-free chocolate chips and sliced strawberries

Instructions:

Brownie Base

  1. Preheat oven to 325F. Combine brownie mix, eggs, and butter (or coconut oil).
  2. Pour batter into well greased cake plate and spread evenly. Bake at 325F for 30 minutes or until toothpick comes out clean.

Cream Cheese Filling

  1. Add 1 lb cream cheese to a mixer or a large bowl and beat until smooth. Beat in the BochaSweet, heavy whipping cream, eggs, vanilla extract, and a handful of chocolate chips (optional).
  2. Pour the filling the filling over the brownie base and bake until center just barely jiggles for 15-30 minutes. Remove from oven and let cool.
  3. After it cooled down, garnish the top with chocolate chips and strawberries and refrigerate for at least 3 hours. Now, it’s ready to enjoy!

Easy and keto friendly are not the words that immediately come to mind as you bite into these keto mini cheesecakes with gooey brownie batter crust. Instead, you’ll think “Wait, THIS is keto? All my problems are solved.”At least for the moment.

Keto cheesecake is one of the things we keep in our freezer to handle cravings for sweets. It’s just one way we make keto sustainable over the long term. Have foods that will satisfy cravings already made and in the freezer. This way, it’s easier to snag something from the freezer than go purchase some cheat food/meal.

We call it our “Keto Emergency Plan”.

Keto Mini Cheesecakes with Brownie Batter Crust

  • Yield: 30 cheesecakes

Ingredients:

Keto Brownie Batter Cheesecake Crust

  • 5 tablespoons butter melted
  • 3 tablespoons cacao butter melted
  • 1/2 cup cocoa powder
  • 1/3 cup BochaSweet
  • Pinch of salt
  • 1 1/2 cup almond flour

Keto Mini Cheesecakes with Brownie Batter Crust

  • 4, 8 oz packages cream cheese softened
  • 1 1/4 cup BochaSweet
  • 1 tablespoon pure vanilla extract
  • 1/2 teaspoon salt
  • 1/3 cup sour cream
  • 1/3 cup heavy whipping cream
  • 4 large eggs

Instructions:

Crust

  1. In a medium microwave safe bowl, melt together butter and cacao butter. In the microwave, cook for 1 minute and then stir and cook for 20 seconds, stir and repeat the 20 second intervals until completely melted.
  2. Stir cocoa powder into the warm butter mixture until smooth. The warmth of the butter will activate the cocoa powder creating a deeper, richer flavor.
  3. Stir in 1/4 cup BochaSweet.
  4. Stir in almond flour until completely combined.
  5. Divide crust among 30 cupcake cups and then press down with a spoon to create the crust. Set aside while you make the filling.

Filling

  1. Preheat your oven to 300 degrees.
  2. In a large mixing bowl, combine warmed cream cheese, BochaSweet, vanilla extract, salt, sour cream, heavy whipping cream and eggs. Mix together until completely combined.
  3. Use a 1/4 cup measuring cup to fill each cupcake tin with a little less than 1/4 cup of filling. You’ll have a little more than 6 cups of batter and to make 30 mini cheesecakes you’ll need about .21 cups each.
  4. Bake in preheated oven for 20 minutes at 300 degrees. Centers should be slightly jiggly. Turn off the oven and crack the oven door open. Allow the cheesecakes to remain in the oven for 1 hour before removing them too cool.
  5. Store in the fridge or freezer once completely cooled.
  6. Garnish with dark chocolate or chocolate chips if desired.

Serves: 30 cheesecakes

Keto Mini Key Lime Cheesecakes recipe & content provided by Tara Wright, Whole Body Living

These keto mini key lime cheesecakes are so easy to make. Single-serve cheesecake are perfect for parties or if you just want a quick bite.

The tangy keto cheesecake filling pairs perfectly with my keto walnut cheesecake crust. The only tweak I made to the original recipe was to leave out the vanilla extract so it didn’t overpower the lime in the filling.

Mini Key Lime Cheesecake

Mini Key Lime Cheesecake

Ingredients:

  • 4 packages cream cheese (softened)
  • 1 1/4 cup BochaSweet
  • 4 eggs
  • 1/3 cup sour cream
  • 1/3 cup heavy whipping cream
  • 1 tablespoon pure vanilla extract
  • 1/2 teaspoon salt
  • 1 zest of lime
  • 1/2 cup lime juice

Instructions:

  1. Prepare a keto cheesecake crust of your choice.
  2. Fill muffin tins lined with cupcake liners. The best option is parchment paper cupcake liners because they release so easily.
  3. Pre-bake your crust if instructed to in the keto crust recipe. Allow too cool.

MAKE THE FILLING:

  1. Preheat oven to 300 degrees.
  2. Combine your warmed cream cheese and BochaSweet and mix on low until smooth.
  3. Note: If your mixture is not getting smooth and still has chunks in it, your ingredients aren’t warm enough. Stop and warm them now before you add the eggs! Make sure the next ingredients are warmed as well.
  4. Add eggs, heavy cream, sour cream, vanilla, salt, lime juice and lime zest. Mix on low until smooth.
  5. Pour filling onto cooled crust.
  6. Bake for 20 minutes at 300 degrees.
  7. Turn off the oven and allow to set for 1 hour.
  8. Remove from oven and allow to cool completely before placing it in the refrigerator.
